eating my way through europe
despite something i tweeted right before i left for geneva, my family and i did eat our way through europe.

chorizo + peppers + onions + arugula + a fried egg
during the summer, when most of my brothers and i are home, we go through an astounding number of eggs. ben and tim are both "bulking," or whatever, so together they can go through a dozen eggs in 2 days. they're really big on protein, clearly.
the boys have all been in madrid for the past week, so there's actually been eggs in the fridge, for once. i made this easy breakfast using leftovers from my brunch and arugula from the fridge.
i normally like to sauté spinach with my eggs, but since we were out, i used arugula. i actually think i like it better - spinach can be kind of boring, but the arugula has a good peppery taste that works really well with the eggs.
this meal was so simple it doesn't even really need a recipe. i threw together two handfuls of arugula and the leftover chorizo/onion/pepper dish from my brunch and sautéed them together. i didn't even need to any olive oil, because the fat from the chorizo was enough to meld all the flavors together.
this really doesn't need a recipe, but basically, this is what i i did: i sautéed the arugula with the peppers and onion mixture over medium heat until the arugula was wilted and a darker shade of green.
when that was done, i pushed it to the side and fried an egg. when that was cooked to perfection (it accidentally broke when i flipped it though, whoops) i used a spatula to put the veggies and sausage into a bowl and then topped it with the egg.
i sprinkled some sea salt and dried herbs over the dish and ate it in probably half the time that it took to make it.
my flight to switzerland leaves in a few hours, so i'm off to finish packing. we're meeting my brothers in geneva and then traveling around switzerland and eventually to paris and then back home in 10 days. i'll be eating a lot of delicious food and taking a lot of pictures of said food, so stay tuned!

brunch brunch brunch (brunch!)
brunch! brunch! brunch! the best meal of any day. breakfast is so exhausting to prepare ya know? so you might as well make it a double meal and eat for several hours straight and then collapse into the hammock and sleep it off. because brunch is tiring, even when it's this simple.

perfect breakfast bars
i had an internship this summer that started at 10 am. so, every morning i would have time to wake up, roll around in bed for a while and slowly make a bowl of oatmeal. now that my internship is over, i'm working more early shifts at the front desk of a gym, and i have to be there by 8 am. i barely have time to get dressed before driving into town, let alone make a fancy bowl of oatmeal with blueberries and figs and almond butter. in retrospect, i'm baffled that i managed to wake up at 6:30 for school every day in high school. my first period started at 7:25, which seems absurd to me now.

apricot fig chia jam
once in elementary school, one of my friends remarked that the apricots we were eating were the same size and texture as my hamster. i think about that every time i eat apricots, although it doesn't really stop me.
we've had a container of apricots sitting on our counter for a few days that i've been eating now and then. but, i got bored of them in their current form. i also needed something to go with my peanut butter.

walnut pesto pasta
i came home last night to find my mom, my brother, and a huge mess in the kitchen. it was my brother's turn to cook dinner, so he decided to make pesto pasta. even though ben was supposedly making dinner, when i came home it seemed like my mom was really doing all the work. i'm sure she was just doing the grunt work while ben played master chef, but who could know for sure?

creamy blueberry oatmeal
i've always hated when food bloggers claim that their food tastes like something else. like, "reese's cup smoothie," or "apple pie granola bars." just because something has the same general flavoring as something else doesn't make it an equal substitute. anyway. this oatmeal is great, but not because it tastes exactly like blueberry cobbler. it doesn't. if you want blueberry cobbler, you should probably eat some, because any oatmeal substitute is sure to disappoint, regardless of what all the health bloggers say.

rise 'n' swine: our first pig roast
my brothers and i have been debating the idea of roasting a whole pig, caribbean-style, for over a year. despite my occasional forays into vegetarianism, i've always been completely on-board. this summer we finally got our act together and we hosted the first annual freeman family pig roast. as the name implies, hopefully this will be a yearly event.
